To get butter from buttermilk, churning is to be done.

Churning is a process which involves churn, a container in which cream is stirred to obtain butter.

Churning physically agitates the milk which creates the air bubbles and finally loather.

The fats in the milk gets cluttered a little by little and once it covers the churn, the air bubbles get popped and the clumps of excess fat in the milk get clubbed with the fat cluster.

Finally the butter floats on the buttermilk and later it gets separated for cooking use.
