Irritability is a feeling of agitation like when we touch or tease a cockroach with something, it will react as soon as it feels it. A dead cockroach won't ever react to stimulus. Many insects share same nervous system like cockroaches, they will react to irritation and move and then we can determine whether the cockroach is alive, if it doesn't move, then obviously dead.

Metabolism, growth and reproduction, other remaining options will also helps us to determine it but they will take some time to do so. Here, a group of students are supposed to try, so the fastest method—irritability is the appropriate life property to give a try.
