  • Since sprouted seeds have already started growing, they are using the stored nutrition in the seed for growth, until they can produce their own food through photosynthesis.
  • Therefore it follows that they would not provide as much energy as unsprouted seed.
  • In the case of grains, one of the first things that happens in sprouting is that amylase becomes activated, and starts breaking down stored starch  into glucose molecules.
  • Some people seem to think this makes it easier for us to digest, but saliva contains amylase as well, so we have no need to rely on seed enzymes to start the digestive process.

The germinating process break down some starch which make the percentage of nutrients heigh. It also break down physical acid which absorb vitamins in large quantity so that we get more energy after eating them. It can be easily digested and absorbed by our body
