Sugar and salt solutions both are the hypertonic solutions and causes exosmosis. If we put the potato chip in a strong salt or sugar solution, it will lose mass because the concentration of sugar surrounding the potato is grater than in the potato. Therefore the water will diffuse out of the potato into the sugar solution, this will make the potato chip flaccid.
