A nursery is a place to protect seedlings so they have the best chance to germinate and to grow well until they are strong enough to be transplanted in the field. Without a nursery, some seedlings (especially domesticated ones) would have a lower chance of survival out in the open.

So, they can't dry into a pod and shoot the seeds out. But they develop a very favourable aroma to attract animal/birds and crack open to expose the seeds to the dispersal agents thus ensuring that their progeny survive and develop into next generation.

Soaking seeds before planting helps you to break down the seed's natural defenses against what it expects from Mother Nature, which then allows it to germinate faster. Another reason is that while Mother Nature actively assaults seeds, she also gave those seeds an internal gauge to help them know when they should grow.
