If they could be brought together with regular matter particles in some sort of chamber, the result would be a giant release of energy. That energy could, theoretically, power a starship.

Antimatter cannot be used as an energy source. Although the annihilation of matter and antimatter releases energy, antimatter does not occur in nature. Even the storage of antimatter requires a lot of energy.
