Milk consists of globular proteins. It can be converted into curd or yogurt by the process of fermentation. In f fermentation process, lactobacillus produces lactic acid. Thus, pH of the milk becomes more acidic. As proteins structures are sensitive to pH. Therefore, the globular proteins denature and precipitate that result in formation of curd.
