Nitric acid reacts with metals except Gold (Au) and Platinum (Pt) to form metal nitrates and nascent hydrogen*.
The nascent hydrogen produced reacts with nitric acid to form nitrogen oxides. The nascent hydrogen reduces the nitric acid and thus nitric acid acts as an oxidising agent (the substance which reduces itself acts as an oxidising agent).
*Nowadays, the electronic concept is used to explain the oxidising action of nitric acid.
