Lime water is a solution of calcium hydroxide. When you add carbon dioxide it forms calcium carbonate 
Ca(OH)2 + CO2 → CaCO3 + H2O 
The CaCO3 is insoluble, so it precipitates out as a white precipitate - the liquid turns white.


Vitamins are used by cells in their original form so they do not require enzymes.
