It happens because the water from the surrounding diffuses into the raisins resulting into swelling of them. This process is called osmosis. If these raisins are placed in a concentrated salt solution, they will shrink due to osmosis.

Either way… I guess you meant - “… in ‘saturated’ salt water”

So…

Raisins are already shrunken fruits (they have hardly any water).

Saturated salt water has a very low concentration of water, and the ratio of salt in greater than that if water.

SO naturally, we know water travels from higher to lower potential. This is why, the water will FLOW OUT FROM THE RAISINS, INTO THE WATER, by the process of OSMOSIS.

And your raisins will shrink further! :)
