The answer for this question is in the book Who were the Shudras...
But I will try to give you a brief note on it...
1. First thing the caste system was formed outside India in Indo-Aryan society (West of Afganistan (Afganistan was a part of India that time and last Hindu king in Afganistan was Raja Dahir), i.e. Iran).
2. There were only first three varna's namely Brahman, Kshatriya and Viashya.. Shudra was a community of people who were from the class Brahmin or Kshatriyas.
3. Shudra's were expelled people from the varna system because of their mistakes or some wrong doings (Punishment) like if Sacred thread was not wear by Brahmin/Kshatriya, Brahmin did inter dining with other caste person, marry outside their class, Kshatriya performed sacrifice by the Kshatriya priest not the Brahmin (The sacrifice performed by Bramhin was only valid sacrifice, by others they were considering as invalid).
4. The best example for this is crowned ceremony of Chatrapati Shivaji Maharaj that is done by Gaga Bhat (Brahmin Preist from UP), All Brahmins in maharastra refused to perform ceremony because they consider him as Shudra King. And superstition was so prevalent even king does not want to perform ceremony by other class person only when Brahmin performs a ceremony it is considered as valid one.
5. Conflict and wars between Kshatriya and Brahmins, degraded many kshatriya
kings to the Shudra class.

These Shudras as a part of their punishment, were not allowed to study vedas, to recite any hymns, to hear any verses, etc and if they did then Brahmin used to cut their tongue, pour hot molten rod in their mouth, chopped off their private part if they did any sexual harassment, etc there were many restrictions and much more horrific punishment for these people.
7. Though these community of Shudra were having very less number of people somewhere around 6000-9000 people and most of them were part of Kshatriya class. (As far as I did understand, today's Kayasthas are none other than these Shudras of that time)
8. And after aryan invansion in India, They made all indian aboriginals as Shudra and started ruling them... The same punishments were given to these people as like the Shudras of Indo-Aryan society.
9. Aryan invansion - Brahman and Kshatriya were able to defeat these indian aboriginals because of their literature, weapons and horses, that was not there with the indian aboriginals... Brahmins used their superstitions to degrade these original Indians as they were not literate in sanskrit and not advanced on fighting techniques.
10. Original Indians were having a rich farming cultural with them and they used to live in harmony which no other country ever lived in ancient times.. Indians were advanced in farming business (they used to produce rice, vegetables, spices, etc) and many countries used to do the business with Indians in exchange of food and spices (Read the full details in Ancient Indian commerce), Cow was a sacred animal that time as well and still today we observe many festivals related to farming and farmers in India.
11. Now when Indo-Aryans invaded India, they used to perform sacrifice and in that sacrifice they used to kill thousands of cows/buffalo's of Indians.. Everyday was beef steak day for Brahmins.
12. In the name of sacrifice, Brahmins looted all Indians. they killed all their animals, used milk, butter, other products of milk in the sacrifice. Even there are some verses on what part they should eat from cows/buffalo meet.
13. Anyway you can read all these in books or if you know sanskrit read the original scripts in sanskrit, you will find them all.
14. Now after the invansion, Brahmin fabricated their literature to justify the four varnas and their origin... Brahmin, Kshatriya, Viashya and Shudra... It did not happen in one time, all were scattered in Brahmins literature and Manu took all these literature and formed a Manu smriti where rules for all four classes were written and it was followed as a law in India till 1947.
15. While reading the book keep in mind that Shudras of Indo-Aryan society is different than Shudras of Hindu Society. Hindu society Shudras were not original shudras, the dirty system of caste was forced upon them because of their illiteracy in Sanskrit.
They became slave because of their superstitions that Brahmins spread throughout the country and they were not having the knowledge in sanskrit language which was only known to Indo-Aryan Brahmins. And that is the reason why you see today as well Saskrit is spoken by very few people in India not even 1%.
