This is cause that man can't digest cellulose while cow can digest cellulose as it has ruminococcus bacteria that helps in digestion of cellulose

It is the function of the bacteria to digest cellulose. These bacteria require a specific condition to survive and function. In case of the body of the humans, the stomach does not allow such bacteria to function. The stomach, in turn, secrets acid and kills those bacteria. On the other hand, cows have multiple stomachs and hence they allow the bacteria to survive in their stomach. In turn, the bacteria digest the cellulose and provide nutrition to the cows.
