Answer:

1.This is because when a carrot is kept in hypertonic (high salt concentration )solution the exosmosis occurs due to high salt concentration outside and low water concentration due to which water expelled out and carrot gets shrivelled.

2.Phloem helps the plant by carrying sugar,amino acids and other nutrients from roots to the leaves,stem and other parts of the plant. If the phloem is removed then the transportation of substances won't take place and plants would not get the needed requirements to carry out its process and at last the plant dies.
