Explanation:

because it should be a cold item which turns into water on melting. and while freezing thing , we cool it and it reverses because if we give heat it turns back into liquid. But in idlis, the batter is heated to make idli and if we give it more heat , we cannot eat it. or if we cool it, it would not turn back into the batter
