Chapattis made from wheat only swell up but bread becomes spongy , soft and easy to digest. Why it is so?

bread become spongy because in factory wheat 's flour is treated with yeast and these yeast cells will grow up in bread and they start multiplying each other and thus produces ethyl alcohol and form carbon dioxide and make the dough rise.
