If the chips are kept in the packet without nitrogen then it will get moisturised and will not be suitable for eating.

Fats or oils are used in the preparation of chips. After a long time they turn rancid due to oxidation by the air contained in the bags. Nitrogen replaces oxygen present in packets. Being inactive, it prevents rancidity.
