Nitrogen as being an unreactive gas does not react with oxygen, oils and fats present in the packet of chips and hence prevents rancidity. It does not allows chip to provide foul smell or taste.

Nitrogen is chemically unreactive and therefore the chips packets are flushed with nitrogen so as to PREVENT RANCIDITY.

Rancidity is the phenomenon when oily and fatty substances oxidises to produce foul smell.
