Chips packet is flushed with nitrogen becase if they come in contact with air they become rancid and they get spoilt as they contain oils and fats they go oxidation reaction which leads to bad smell, taste which becomes unfit for consumption

They are flushed with nitrogen because nitrogen does not react with he food present in it. If air is filled in, oxygen can react with the food. It is commonly called rancidity.
