Chromatography is a technique employed for the separation of mixtures of dissolved substances. Which was originally used to separate colored dyes.

Seems somewhat correct to me, however, you might want to mention that the components move at different rates/ have different solubility.
Here's a better definition (from google),
A technique for the separation of a mixture by passing it in solution or suspension through a medium in which the components move at different rates.
