There was a maharaja of travancore.He ordered a guest for a grand dinner. So he went to kitchen to see what dishes is prepared by cook. As he enter into kitchen he saw that basket of scraps near to the cook. The cook told that the vegetables are waste. Should he throw them away. The maharaja ordered not to throw them and say that prepare any dishes from this only and move away. The cook think about dishes and finally he find the new dishes. He cut vegetables into long stripes and put them in huge pot and and placed it on the fire to the cook. Then he add some fresh coconut, green chillies and garlic together. He also added this paste and some salt to the cooking vegetables. Then he whipped the curd and added it to the curry. He also poured a few spoonfuls of coconut oil and decorated the dish with curry leaves. The cook surved the dishes for guests that evening. After he give the name of this dishes as avial.. Now-a-days avial dishes is very famous in kerela.. All people couldn't imagine that this dishes is prepared from trash vegetables.
