The earthernpot has a large no. of extremely small pores in it's wall. Some of the water kept in the earthen pot continuously keep seeping through this pores to the outside of the pot. This water evaporates continuously by taking the latent heat of vaporization from the earthen pot and the remaining water. In this way the earthen pot and the remaining water does not get hot and remains cool.

Water looses its temperature through small pores present in the pot. Hence in an earthen pot (matka) become cool during summer.
