In simple words there is a certain amount of vapor that shall be formed by water at a given temperature . On a windy day all the vapors formed are carried away by the wind and hence no vapor is left due to which more water shall be evaporated in order to produce the same amount of vapor. During a sunny day, more amount of vapor is formed but is we compare it with that in a windy day, then it is comparatively less.
