Milk after reaching the stomach,is acted upon by the proteolytic enzyme pepsin. Pepsin hydrolyzes the milk protein, Casein (soluble) into insoluble paracasein which precipitates as calcium paracaseinate to form semi solid curd. This is known as coagulation of milk......
