These are saturated and unsaturated fatty acids. If there is more unsaturated fatty acid in the oils, then they will not freeze in winter season and vice-versa. There are 90% saturated fatty acids in the coconut oiland so it easily freezes when the temperature goes down.

Every fat and fatty acid has a range of temperatures at which is freezes (congeals, gets solid). ... It is, in fact, the main distinguishing point between fats and oils. Coconut oil freezes at a higher temperature than mustard oil because it's a more saturated fat.
