the upper surface of water in open dish absorbs heat and light enery.the molecules on upper surface gains energy and over comes the binding force.since the molecules are released from upper surface it is called surface phenomenon

As the faster-moving molecules escape, the remaining molecules have lower average kinetic energy, and the temperature of the liquid decreases. This phenomenon is also calledevaporative cooling. This is whyevaporating sweat cools the human body.
