It was in 1973 that Madhur Jaffreypublished her first book, An Invitation to Indian Cooking: Classic Indian Dishes—Mostly the Subtle, Spicy Cooking of Delhi, a cookbook widely belived to have introduced Indian cooking to the West. Delhi-born Jaffrey was already a New Yorker by then, having lived in Manhattan’s Greenwich Village, US, for eight years. This year the book turns 40 and Jaffrey, who turns 80 next month, has authored more than 30 cookbooks. She talked to us over email.
