Bakery yeast is common name for the strains of yeast commonly used as a leavening agent in bakery products (bread, cakes, etc) which converts the fermentable sugar present in the dough into carbon dioxide and ehanol
Yeast metabolises the sugar extarcted from the grains , which produces alchol and carbon dioxide and thereby turns wort inti beer
