In this model membranes were described as the protein icebergs in the sea of lipids because in the lipid bilayer membrane all the proteins and lipids are arranged in a mosaic fashion which does not reflect rigidity, here proteins can move or float freely in between the layers of lipids, hence the term fluidity is used.
