DIFFERENCES:

1- There was difference of time.

Example, In the pre-colonial era, Von Bismark made an attempt to unify Germany, to make Germany a strong nation in a different time.  

2- Difference in strategy.

In the case of India, Sardar Patel tried to unify India his goal was that for the newly made state to exist.  Main goal was that India should survive and the presence of such numerous princely states was a threat to India's existence.

Because all of these states were diverse in nature it became a challenge. Sardar Patel attempted to unify the state of India under one rule while it took three wars for Von Bismark to achieve the same with Germany.

There have been many speculations that have been made regarding Otto Van Bismarck and Sardar patel where it was said that Sardar Patel had many similar ideologies to that of Bismarck.

It is quite true to some extent. Even though Bismark mainly believed in the theory of Iron and blood, there were a number of tactics that were actually adopted by Bismarck in order to unify all of Germany into a single nation.

Patel mostly wanted to unify India as well but he did not go take extreme measure like Bismark
