ethylene glycol when heated in presence of anhydrous zncl2. ZnCl2 removes water from the reactant is its function.

Lets assume the glycol as ethylene glycol

Now when ethylene glycol reacts with anhydrous ZnCl2 water will remove ,

See the reaction ,

 HO-CH2 CH2-OH  +  anhy. ZnCl2  + Δ   →    CH3= CHOH  →  CH3- CH

Now we can see that the Anhydrous ZnCl2 realese the water out anf form  acetaldehyde .
