Fatty acids in the lumen of the duodenum mostly stimulate endocrine cells to release the hormone cholecystokinin (CCK) in a subtle way. CCK stimulates contractions in the pretty smooth muscle of the gallbladder in a sort of big way. As well, CCK causes relaxation of the sphincter of Oddi, allowing bile release into the duodenum, which for the most part is quite significant.
