The conversion of sodium benzoate to benzene can be done a very famous organic reaction Kolbe's Decarboxylation reaction. The reaction involves reaction of a carboxylic acid with sodium hydroxide and calcium oxide ( known as soda-lime mixture ) and the mixture is heated which gives sodium carbonate and one less carbon alkane. Hence , it is a step-down reaction to decrease the number of carbons.

Your conversion involves the same method too.

Take the Sodium benzoate and put Sodium hydroxide and Calcium Oxide in it and heat the mixture. The reaction will yield Benzene and Sodium Carbonate as products.

Even if you don't put Sodium hydroxide , it will still react as sodium is already present in the organic molecule.
