You could treat MeI with sodium acetate or potassium acetate in a polar aprotic solvent to produce methyl acetate. The ester could then be distilled away from the higher boiling solvent to afford MeO2CMe. (Do understand that methyl acetate is dirt cheap and nobody would synthesize it in a lab unless maybe they needed a particular isotopically labelled version of the ester.)
