they are cleaned with lyman because they have green coating of a type of Rust which can be cleaned by the ascorbic acid and when acid react on the base then it neutralize it and release the dirty coating of green is removed thanks for giving me chance to answer you

copper reats with moist carbon dioxide in air to form copper carbonate and as a result,copper vessel loses its shiny brown surface forming a green layer of copper carbonate. the citric acid present in lemon neutralises base copper carbonate and dissolves the layer . it give copper or brass vessel a characteristic lustre
