Copper nitrate when taken in hydrated form contains water molecules. Further heating causes the decomposition of copper nitrate to release Nitrogen Di oxide (NO2) Copper Oxide (CuO) and Oxygen(O2).

Cu(No3)2= CuO+No2+O2.
