1- Physics is very difficult to grasp.

Here "are" is used which is wrong. The correct sentence is " Physics is very difficult to grasp."  because there are some words which represent a whole unit and are called collective nouns. For example the army, police, etc. Similarly, physics represensts a collective noun, but is used as a singular noun.

2- He saw an inkpot.

The indefinite articles "an" is used before the word which gives vowel sounds. ( a, e,  I, o, u are vowel words)

3- She is one of my sincerest friends.

In this sentence, you are talking about a particular one out of many. Therefore, its friends, not a friend.
