Here is ur answer
Crystallisation is better as it give us the pure salt whereas there are many impurities in salt obtained by evaporation
Crystallisation donot led to water loss but in evaporation the water gets converted to vapours
Crystallisation separate soluble and insoluble impurities which was not done in process of Evaporation
In process of evaporation is done in high temperature so mostly the product obtained gets burnt or become blackish such as in sugar but in crystallisation it doesn't happen
