(1) In evaporation, the solution needs to be at the boiling point during the whole process, which might degrade the solute. (Depending upon temperature sensitivity of the solute)

(2) While the crystals are being formed, the solute molecules throw most impurities out from the crystal lattice because they want to be arranged in a regular manner. Which does not happen in the evaporation process. So the crystals have higher purity compared to the product you get from the evaporation

Why crystalization is better than evaporation?

  1. It occurs on the entire surface.
  2. we get solid in the pure crystallized form.
  3. The soluble impurities get removed in this process.
  4. It doesn't require very high temperature conditions.
