Crystals of sugar are obtained in sugar mills by purifying sugarcane juice and then evaporating it.On evaporation,the concentration of sugar increases .On cooling the crystals of sugar separate out as the solubility decreases with the fall of temperature.The sugar crystals are then refined.

Sugar can be separated from its solution by using both evaporation and crystallization. But crystallization method is preferred over evaporation because in crystallization we get pure crystals of sugar whereas in evaporation charring of sugar can takes place.
