Milk is converted into curd by the process of fermentation. Milk consists of globular proteins called casein.The curd forms because of the chemical reaction between lactic acid and casein. Addible acidic substance (lemon juice, vinegar etc.) in previously boiled and cooling that to Luke warm stage. Allow it to sit.Then increased acidity causes milk protein (casein) to tangle into solid massee or curd.
