curd sets within 4-5 hours in summer but takes more time in winter? why

becoz of the difference in temperature in summer and winter seasons

the milk is set into curd with the help of bacterias like lactoballicus and stereptococci and during its setting the organic sugar ( lactose) is converted into lactic acid which is present in the milk. the curd takes comparatively more time to set in winter than in summer because the bacteria which sets the curd is activated on higher tempratures and such tempratures helped this becteria to multiply faster.whereas it takes more time in winter because of unavaliblity of high tempratures.
