Cutting vegetables is a PHYSICAL CHANGE. Though it cannot be reversed but their is no change in the vegetable. Only it is cut into several parts.

But cooking vegetables is a chemical change.

cutting of vegetable is a physical change as it does not make a new substance. the cut vegetables remains same. but if we talk about cooking of vegetable then it is a chemical change because in cooking, vegetables form a new substance called 'food'
