At lower temperature, the vapour pressure is low.As a result, vapours of the tear producing chemical are less.So cutting onions taken from the fridge is more comfortable than cutting onions lying at room temperature.

Cutting onions taken from fridge is more comfortable than cutting onions at room temperature because in normal cases when the onion is cut with knife it leads to the damages of the cells and leads to the production of Propanethial S-oxide which in turn produces sulphuric acid.  

The resulting sulphuric acid combines with water present in the eye and leads to irritation of eye.  

When the onion is kept in lower temperature as in Fridge, the enzymatic activity of onion is reduced because of low temperature. Due to which the production of Propanethial S-oxide is reduced and thus no irritation of eyes happens and it becomes comfortable to chop it off.
