In the absence of oxygen, alcoholic fermentation occurs in the cytosol of yeast (Sablayrolles, 2009; Stanbury et al., 2013). Alcoholic fermentation begins with the breakdown of sugars by yeasts to form pyruvate molecules, which is also known as glycolysis. Glycolysis of a glucose molecule produces two molecules of pyruvic acid. The two molecules of pyruvic acid are then reduced to two molecules of ethanol and 2CO2 (Huang et al., 2015).

Under anaerobic conditions, the pyruvate can be transformed to ethanol, where it first converts into a midway molecule called acetaldehyde, which further releases carbon dioxide, and acetaldehyde is converted into ethanol. In alcoholic fermentation, the electron acceptor called NAD + is reduced to form NADH. The exchange of electrons that occurs in the process helps to build ATP.
