Hey Mate __!!!
The decomposition of vegetable matter into useful compost is carried out by microbes. These reactions involve breakdown of bonds. The overall reaction is exothermic. But we can not give a single chemical reaction as every vegetable matter is made up of different kind of organic compounds and also the product formed which is a compost consists of different composition of carbon to nitrogen ratio.
Thanks__!!!
