Rancidity can, basically, be defined as oxidisation of fats and oils present in our food (or anywhere else besides food), thus making them rancid and changing their tastes and smells.

Like- In the case of chips, we use antioxidants to prevent rancidity or they, the chips, may become tasteless or worst in taste and smell.

In general terms, " Rancidity " can simply be defined as the phenomenon in which fats and oils get oxidized and get damaged.

Example – Manufacturers of chips usually flush the packets of chieps with non - reactive nitrogen gas to prevent the chips from getting rancid.
