• Rancidity is a process of oxidation of foods containing fat and oil with an unpleasant smell and unpleasant taste.It can be prevented by storing foods(with oil and fat) in air tight containers and covers filled with Nitrogen gas.For example : Chips after sometime have an unpleasant taste.
