The loss of biological activity of protein in its native form, when it is subjected to physical changes, like high temp. or chemical changes like change in pH
During this the secondary and tertiary structures get destroyed, while only the primary structure remains.
For eg. coagulation of egg whites on boiling

De-naturation of Protein :-

Protein with 3-D structure has their biological activities are known as Native protein. When these native proteins are subjected to any physical change like temperature and chemical change like pH than their hydrogen bond and their structure becomes unfold and uncoiled. Due to this they loose their biological activity. This is known as denaturation of protein.

\sf{\bold{Example\:}}

  • Coagulation of white egg, albumin egg on protein.

  • Curdling of milk due to the formation of lactic acid by lactobacillus bacteria
