Digestion refers to the breakdown of food into smaller components (or simpler substances) that can be absorbed into the bloodstream to be utilised by the body.
The mouth is the beginning of digestion.
In mouth, digestion of starch begins as we chew. The saliva contains salivary amylase, a disgestive enzyme that breaks down the starch content (often carbohydrate) into simple sugar. This is also the reason why chapathi/bread tastes sweeter when chewed for a longer time.
