Ensemble average is a very powerful tool in equilibrium statistical mechanics arising out of a system being ergodic. Imagine trying to measure some property XX for a system in equilibrium and where XX is not a constant for the ensemble in consideration. For e.g. consider the NVT (canonical) ensemble where the number of particles (NN), volume of the system (VV) and, temperature (TT) are held fixed and the property XX that we are interested in is the energy (EE) of the system.

However the measurements of EE are time independent since the system is in equilibrium and we could end up taking a number of measurements for different realizations of the same ensemble. Thus, ensemble averages are averages of some parameter subject to the constraint that these measurements were made in a specific ensemble. For e.g. the ensemble average of EE in the canonical ensemble would correspond to the average of the measurements made for EE of the system when the NN, VV and, TT for the system were held fixed.
